I like to make a big batch of pancakes and keep the batter in the fridge in a pitcher so that I can just cook them up quickly in the morning. The batter tends to separate and look yucky until this morning when I discovered a trick. I'm running low on flour and wanted something different so I blended some oats in the blender and added them in place of half of the flour. Not only were they yummy, fluffy, and healthy, but the batter still looks fresh and has in fact thickened some instead of getting runnier. Just use your favorite pancake recipe or try mine.
1 3/4 cups flour
1 3/4 cups oats blended in the blender
1 TB salt
3 TB sugar
6 eggs
1/2 cup oil
about 4 cups milk
